Bikini Recipe

Serves 10 people

Ingredients for the Clementine Syrup (produces 750ml)

300ml recently pressed clementine juice
200ml fresh lemon juice
500g granulated sugar

For the Premix (makes 850ml, enough for 10)

400ml premium vodka
100ml classic gin
150ml peach-flavored liqueur
200ml citrus syrup (from the recipe above)
Whole cranberries, for garnish
Mandarin essential oil, to finish

Instructions

Making the Syrup: Put the listed items in a saucepan, heat until it reaches a gentle boil, agitating to dissolve. After that, take off the heat allowing it to reach room temperature fully. Pour into an sterilised bottle, close it and refrigerate it in the fridge, where it will keep for about four weeks.

Preparing the Cocktail Base: Combine the specified liquid ingredients in a large bottle, allow it to infuse for an hour, then strain , ideally through muslin, to ensure it's perfectly clear.

For serving: Pour 85ml from the cocktail base into a cocktail shaker containing ice, gently stirring lightly for a minute to chill. Filter to a frosted cocktail glass or a similar vessel, garnish with some cranberries adding the final touch using a brief mist of the essential oil over the drink.
